Combining the nostalgic allure of saffron with Asian-inspired plum notes, this dish offers an exquisite balance of elegance and comfort. Perfectly suited for a cozy evening of indulgence, it pays homage to classic flavors while embracing a modern twist.
Step 1: Soak a generous pinch of saffron in 2 tablespoons of warm water for 10 minutes to release its vibrant color and aroma.
Step 2: Prepare the plum glaze by pitting and pureeing fresh plums, then combine with dark soy sauce, rice vinegar, brown sugar, grated ginger, and minced garlic in a saucepan. Simmer until thickened for about 20 minutes.
Step 3: Preheat the oven to 375°F (190°C). Season the chicken pieces with salt and a drizzle of sesame oil, then brush with the saffron mixture.
Step 4: Heat an ovenproof skillet over medium-high heat. Sear the chicken on both sides until golden, approximately 5 minutes per side.
Step 5: Pour the plum glaze over the chicken and transfer the skillet to the oven. Roast for another 45 minutes or until the chicken is cooked through.
Step 6: Garnish with sliced green onions and fresh coriander leaves before serving.
